Vegan Roast Sunday dinner

On Sundays I always do a roast and I'm so pleased that everyone (including the very non-vegans)  enjoys my nut roast with onion gravy... and yes, we had courgettes again!
I believe everyone's taste and expectation of all meals is very different. I have tailored my cooking to cater for a varied group of family and friends who will always be very forthcoming and indeed, I have encouraged everyone to be constructively critical of all my recipes as I  can't bear the thought  that I am wasting time producing food that really isn't being thoroughly enjoyed.

I coat my potatoes for roasting and I make a large nut  roast in advance that I freeze in slices for convenience and aesthetics!  I have learnt the hard way that when trying to  entertain, food that has never been a problem in the past can suddenly develop a life of its own and decide not to leave the  greased baking tray or miraculously fall apart before your eyes... Making good use of the freezer when using up fresh produce and catering for big groups is a top tip of mine.
