I am certainly no chef  and only use really basic kitchen  implements. ..see attached  picture.  I  really love  good food and  am truly delighted  when friends and family,( used to  the taste  of usual  egg and dairy cakes ) beg for  recipes and cooking methods!  I am probably the messiest  person in the kitchen but I tidy  once things are cooking ...whether  on the hob  or in the oven. 
I will be sharing some time saving  tips and short cuts  I wish  I had done  years ago. ....

Seriously quick  and  truly  scrumptious cherry and coconut  muffins. 

Makes 6  big  delicious  muffins. ..

You will need
A large  mixing bowl and hand whisk
Smaller  bowl
Muffin tray with muffin cases
Cup measure
Teaspoon measure 
Tablespoon measure

1and a 1/4cup plain flour 
1/2 cup caster sugar 
1 teaspoon  bicarbonate of soda 
1/2 teaspoon  fine  sea salt 
1/3 cup dessicated coconut 
Put these dry ingredients  in the bowl  and mix together  thoroughly

In smaller bowl put 
1 tablespoon  cider vinegar 
1/2cup soya milk
1/3 cup rapeseed  oil
1 teaspoon  vanilla  essence
And whisk together  quickly until  emulsified ..does  happen  quickly! 

Quickly  pour into  dry  mix and mix together  very quickly  keeping as much air in. The mixture is quite  stiff.

Lastly add the cherries....
14 cherries. Approx  fresh is best if possible ..pitted  and quartered .

Pile into the cases  ..I use two metal spoons  for ease..and bake in preheated oven 180 degrees  for 25minsuntil well risen and golden brown on top.
Leave to cool  before eating and they will  easily  come out of their cases  intact  as traditional muffins. Yes. ..I have previously  had  disasters......
